Lentil Soup

Olive oil (organic, extra virgin, cold-pressed)
3 ribs celery, diced
3 carrots, diced
1 large onion, diced
1-2 cloves garlic, minced
1 28 oz. can diced or ground organic tomatoes
3 cups chicken stock
1 1/2 cups french green lentils
1-2 T cumin or pepper sauce (to taste)
chopped fresh parsley
1 tsp. fresh squeezed lemon juice
ground pepper to taste

Heat the first five ingredients until softened.

Add tomatoes, stock, and lentils and bring to a boil.  Lower to simmer for 40-45 minutes.

Add remaining ingredients and serve.  Makes approximately 6 cups.

NOTE:  Always purchase organic ingredients when possible.  Add additional broth if the soup becomes too thick.  This freezes great!
