This recipe is by special request from quite a few guests that recently enjoyed it at my house. So, let me first state that it's not the healthiest of recipes (since it isn't made with whole grain pasta) but it is easy and everyone loves it. It is great for a buffet since it can be made ahead of time and it only takes 15 minutes to make. It also feeds a large number of people for a minimal amount of money. So, Donna et al, here it is!
1 lb. orzo pasta, cooked
1 pint cherry tomatoes, sliced in half lengthwise
1 bunch scallions, sliced
1 cucumber, sliced and cut in quarters
Garlic Expressions salad dressing
Cook orzo according to package directions, rinse in cold water, and drain.
Wash vegetables and cut as indicated. Mix into pasta.
Toss with Garlic Expressions dressing, using just enough to coat. Chill for 2 hours or longer to allow flavors to mingle.
Before serving, add a little more dressing as pasta usually absorbs the initial dressing.
That's it! It really is that easy. You may want to experiment using different vegetables and dressings, but this simple combination is always a winner.
