Black rice is a delicious, nutty rice that is high in antioxidants. As we know, the darker more colorful the food, the higher in antioxidants. This rice turns almost a deep purple when cooked and is tastier than brown rice.
Follow this simple preparation:
1 cup black rice
1 small onion, diced
1/4 cup white wine
1 3/4 cups chicken broth
fresh parsley, minced
Saute the onion in the olive oil. When slightly softened, add the rice and saute for another minute or so, stirring frequently. Add the liquids, cover, and bring to a low simmer. Simmer for about 50 minutes. Stir in some fresh parsley and serve. Easy and tasty!
