I was shopping at my favorite store yesterday, Whole Foods, and had no idea what to make for dinner. I walked past the fish counter and noticed a whole Mahi Mahi on ice and on sale. As per their usual excellent customer service, an associate saw me looking at the fresh fish and proceeded to tell me that they would filet whatever size I would like and remove bones. I then asked for recommendations for preparation even though I have cooked it previously. The fish gal cheerfully shared that she likes hers slightly spicy and suggested I bake it topped with the delicious Tequila Lime herb rub they carry and a side of their fresh prepared Mango Black Bean salsa. I bought everything she suggested.
The dish took no time to prepare and it turned out perfectly. I lightly coated the fish with olive oil, rubbed the herb rub on top, and baked it on 375 for about 2 minutes. It was delicious and the salsa was the perfect accompaniment to the spicy fish! How quick, easy, and healthy was that!
I hope most of you are lucky enough to have a Whole Foods nearby or another high quality food store. If not, hopefully you can find similar ingredients at your local store. I just love good, healthy and colorful food like this dish!
