This is a delicious, healthy, cold soup that is so easy to make. It is a great way to enjoy nature's bounty that is wonderfully plentiful at this time of year.
2 cups tomato or vegetable juice (organic if possible)
1 rib celery, peeled and cut into 1" pieces
1 cucumber, peeled, cut in half lengthwise, remove seeds, cut in 1" pieces
1 clove garlic, peeled, cut in 4 pieces
1/2 medium green bell pepper, cored, seeded, cut in 1" pieces
1 small jalapeno pepper, cut in half, seeds removed, cut in 1/4" pieces
4 scallions, cut in 1" pieces
2 medium tomatoes, seeds removed, cut into 8 pieces
2 tablespoons lemon juice
1/4 teaspoon black pepper
Place 1 cup juice into blender jar. Add all vegetables and blend on puree until vegetables are medium-finely chopped (about 10-15 seconds). Add remaining juice, lemon juice, and pepper. Pulse once to combine. Chill before serving.
