1 1/5 cups long grain brown rice (organic if possible)
1-2 T. pesto (store bought or fresh)
Prepare rice according to directions on package. Rinse rice first to reduce starch if desired. A rice steamer makes preparation easy and eliminates the need to keep an eye on it while cooking.
When ready to serve, fluff rice and mix pesto in to taste. Top with slivered fresh basil for a nice garnish.
NOTE: This is a great buffet dish since it is easy and can be served at room temperature. It also freezes well - just pack in a ziploc bag and freeze for up to 3 months. It is delicious served in a wrap with chicken, tomato, and avocado.
